Lauric acid, also known as dodecanoic acid, is a saturated fatty acid with 12 carbon atoms. At room temperature, it is a white needle crystal with a slight fragrance of laurel oil. Insoluble in water, soluble in methanol, ether, chloroform and other organic solvents, slightly soluble in acetone and petroleum ether. Despite its name, lauric acid is only 1-3% of the Chemicalbook oil content of laurel. At present, the vegetable oils with high lauric acid content are coconut oil 45-52%, oil palm oil 44-52%, Babassu seed oil 43-44%, etc. Lauric acid is a saturated fatty acid, but it has a lower risk of cardiovascular disease than other saturated fatty acids.
